Stage Two Fermentation (BEER)

Not Unlike Stage Two turbo kits for cars, Stage Two fermention is where you start getting BETTER PRODUCT. I siphoned all the proto-beer except for perhaps 1/2 quart from the first fermenter (big plastic bukkit) into the nice glass carboy, leaving behind a thoroughly chunky gloppy yeasty sludge. Ew. Isn't it great? The process of making the beer is almost as much fun as drinking it is.

I am really looking forward already to the next batch where I can brew some particular type of beer, rather than just "Dark"

Yeah — it doesn't take very long to get to the point where you can say "I think I'll make <insert style here>," and then proceed to make a pretty darn good example of that style of beer. And it's just awesome when you realize you've gotten there.
